I have backyard chickens so fortunately I have access to cleaner/fresher eggs, and I make this often. I also grow green onion outside so I cut a little bit of that for toppings. A sprinkle of pine nuts if I'm feeling extra fancy. It's amazing.

In some countries people really don't like taking risks with their food. Even if the chance is 1/500000 they will avoid it anyway.

I tried this for the first time ever last weekend (just cuz I was stupid hungry and impatient lol), it is surprisingly good if you are ok with the texture. Raw eggs surprisingly taste like soft boiled eggs to me. Goes great with some crumbled nori.

I live in the US and have probably eaten this a hundred time or so (with 2 eggs/serving) and haven't gotten sick once. I don't buy eggs that are particularly fancy, just regular large brown or white non-organic ones from the supermarket. It's fine if you make it with rice that's piping hot (I typically cook rice the night before and microwave a bowl of it in the morning for 1:30), and you have to make sure you mix the eggs and rice thoroughly. With the right egg-rice ratio and sufficient mixing/frothing I typically get the TKG to the consistency of oatmeal.
