    A reaaallly good chicken dish, if you use a crock pot, is called "Creamy Chicken Italiano" and you can either make it on a bed of rice OR wide egg noodles. We are vegetarian anymore but I might hafta' make an exception for this dish.

    2 Chicken breasts
    1 can Cream of Chicken Soup
    1 package Italian Dressing
    1 package/sleeve Cream Cheese

    Put the chicken in crock pot.
    Mix packet of Italian seasoning with splash of water (like maybe 2 tablespoons of water?) with fork. Pour this over chicken.
    Slow cook on LOW for 4-5 hours. (If chicken shreds, all the better.)

    In saucepan melt block of Cream Cheese mixed with can of Cream of Chicken Soup.

    When chicken done, add soup/cream cheese to it and stir up.

    Cook on high for another half hour to an hour.

    Make rice or egg noodles and spoon the above over it.

    Soooo good. Guaranteed! 🙂

    Hi Karen! That meal looks delicious 😃. I'm single and live alone too but for some reason its hard for me to find the motivation to cook for myself. I could cook a casserole or bake a lasagna but don't want to be stuck with tons of leftovers that I will either have to freeze or eat every day during the same week. Any suggestions? Thanks 😃
