Amazing ideas, thanks for sharing! My fave veggie wrap is hummus, avocado, kale, cucumber and sriracha 😍 it’s amazing but so addictive! All I ate last summer lol. Stupidly I’ve never thought about taking ingredients separately and making the wrap at work! Will definitely do that in the future as I’ve reserved my fave lunch as an “at home” only thing until now! 🙈 thanks love! X

My name is Marianne (1965) and I live with my wife in Amsterdam.

We have been vegetarian for more than 20 years and my pleasure in vegetarian cooking is only increasing. I see cooking as a creative process with a pretty quick and usually (at least the intention) very satisfying result!

I enjoy trying new recipes, but I also honor the family favorites, and like to cook Italian, Indonesian, Indian and North African.

I think it's a sport to process leftovers into a delicious meal, and then often cook something more than necessary.

With this ebook I would like to show you how delicious and varied vegetarian food & life can be and I hope to inspire others!

    CONTENT:

Stuffed paparika with black beans, pumpkin and almonds

“These stuffed peppers with black beans, pumpkin and roasted almonds look good, taste great and are easy to make.”

Bliss bowl with roasted curry cauliflower, couscous and hummus

“Oh what is this delicious …! The combination of oven-roasted curry cauliflower, sweet-sour cucumber, fried mushrooms on a couscous bed with spicy hummus and yoghurt-tahindressing is truly delicious!”

Roasted pumpkin and red onion with tahini and za'atar

“Delicious, beautiful and easy – that's this roasted pumpkin dish!”

    Green shakshuka with parsley yogurt

“This is a delicious meal: green vegetables and onion baked in the frying pan with feta, an egg and parsley yoghurt sauce. Yammie!”

    Gado gado bowl

“This bowl is delicious gado gado.

Gado gado is always delicious, but this one, with black rice with roasted coconut, tempé marinated in a spicy ginger dressing, harticots verts and papaya with peanut sauce is very special. A must so.

    Tomatoes filled with herbal mixture

“This is a very tasty, beautiful and simple appetizer. Tasty with some (leaf) lettuce and some pieces of spicy goat cheese.”

    Brussels sprouts, carrots and prunes

“Oh, how nice! And so easy to make, these sprouts with carrot or celeriac and prunes from the oven.

We ate nuts-saturated herb hummus. Also very easy (but the nuts must be at least 3 hours).”

Carrot zucchini noodles with peanut sauce

“Very simple, very tasty and super healthy vegetable dish. Noodles of winter carrot and zucchini, short-fried, topped with a peanut-soya-lime sauce with a boiled egg – delicious!”

Stuffed zucchini with pine spice salsa

“These zucchini filled with a mixture of parmesan cheese, breadcrumbs, zucchini pulp, tomatoes, oregano and pine nuts really taste delicious.”

    And much, much more!

Very helpful video but you pronounced so many words wrong… (cilantro, jalapeno, and balsamic). Why? Are you from another country or something? I thought you were Canadian. Did you have a poor educational background?

Really appreciate your videos, I am an avid meat eater who is begrudgingly becoming a vegetarian for health reasons. Your videos have shown me the variety available in a vegetarian diet that i thought would be nonexistent. Thank you!

Hi, Erin! I just came across your channel a few days ago and i just LOVE your videos! Your content is great! I love the way you shoot, your editing is flawless and you're so pretty to boot! I love this video in particular, and wanted to share with you that I tried all 5 of your recipes IN ORDER, just like in the video and they were AWESOME! The Monday quinoa bowl and the Wednesday wrap are my faves and I was so surprised and excited to see they were so easy to prepare and SO DELICIOUS! I added a smear of greek hummus from Trader Joe's to the wrap and found that it gave it a nice taste. I am just starting my vegan journey, so this video was super helpful. THANK YOU SO MUCH and keep up the great work! Oh, side note- I found the Greta Work Tote by Pixie Mood on Amazon and was able to order it! 🙂
