    Omgosh!!!! I just made this for dinner, and it was SOOOOO GOOOOOOOD!!!!!!!! But like all recipes I try, I tweaked it a little. In the mixture, I added pinto beans along with the black beans, and I also added about 1/2 cup of sour cream to it!!! Then,right before I put them into the oven, after I put the remaining cheese, I added dollops of sour cream on top of each enchilada!!!!! it was soo DE-LISH!!!! Oh, and I also added a dash of paprika to the sauce!! yum!! thanks for the recipe!!!

    Just wanted to let you know I made this last night for my husband and two girls. They loved it! By mistake I bought a can of beans with jalapenos. My 13 y.o. didn't care for it but will make it again with reg. beans. Thanks for the recipe. Will definitely make it again.

    Hola Kathryn! Saludos desde Aurora, Colorado! How do you feel about using frozen spinach for this recipe? I had all the ingredients except for the fresh spinach so I used frozen instead. The frozen spinach is also less expensive than the fresh. 🙂 My family and I love all the meals we have tried from your videos. Gracias!!

    It pisses me off how companies who deal with 'whole wheat' items get away with calling the product whole wheat when in fact it isn't. By law, they can put a DASH of whole wheat on top of a pile of processed bleached flour and can legally label it WHOLE WHEAT. A lot of people don't know this because companies will never want the public to know right? SMH

    Hi made this tonight and my family loves meat. And I have a Great News everyone gave thumbs up for the meal. Thank you for posting it. It cost total about $2 made homemade soft tortillas for cutting the cost. Again thanks for posting.

    thank you so so much! I just haven't had time with a 10 month old to go shopping so i used this recipe as inspiration and made the best enchilada lasagna with only ingredients i already had including left over wraps. It turned out amazing, it was cheap, took only half hour and bonus i didn't leave the house! Thank you Do it on a dime family 🙂 p.s my son loves Carson lol its really cute

    I do something similar with vegetarian refried beans, just spread them right out of the can onto the tortilla, and I don't saute' anything first, just add them, less fat that way. Works about the same, only the refried beans are pretty moist so the end product is a bit softer… and just a little FYI for those who may not be aware, you can make your own chili powder by mixing cumin with paprika. That way you can vary the amount of cumin to suit your family's tastes. I use less because my taste buds say too much cumin is bitter. Just me.. 🙂
