I want you to know that last New Years I made your other entire ‘Christmas’ feast with the Portobello mushroom Wellington and it was seriously INCREDIBLE!!! Beautiful and delicious and I was so proud of myself—as I was not known as a good cook and was generally very uncomfortable in the kitchen—but you have transformed me!!

    So today I’m making the same feast for the potluck of my final session of a class on Compassion—ironically, no one in the class is Vegan beside myself, and so I am excited surprise them all with your entire FEAST to share (rather than just chips and store-bought salsa, or some cop-out like that—which I would have done in the past). 🤦🏼‍♀️

    I am committed to having folks see how filling, creative, beautiful and DELICIOUS leaving animals off the plate can be, and how really easy and fun it is to do for traditional holiday feasts.
    You are expanding the world.

    I share that holiday menu of yours frequently, and now that I see you have so many other videos, I can’t wait to cook with you more and share with all those who aren’t yet vegan themselves. Thank you again so, so much!

    1) I don't like mushrooms, sadly. Can I just leave them out or substitute with something else?
    2) Aren't beets only available in the summer?

    Guys – thank you very much! My first real christmas dinner for the whole family, and they all died for this! Wow – a real banquet! 
    The potatoes, the gravy and the roll: I admit, I doubted a bit, wether a vegan meal could replace meat. And I have to say, it is way better! It tastes like heaven,  it is light on the stomach and highly digestible, though it is highly nutritious and filling. And the taste! A big, big surprise for all of us and for all our senses. I can only thank you! And buy your book …

    On my puff pastry it advices an oven time of 15-20 minutes – what would you suggest as a solution, since your baking time is 35-40 minutes (minimum 30)? 
    An answer would be highly appreciated!
