We love experimenting with new flavors in the kitchen, and when we’re not focusing on the most delicious dinner recipes for you and your family, we’re whipping up treats for breakfast, snacks or a cheeky cocktail. Don’t worry, we always share the good ones with you! This brings us to oatmeal. Plain old, boring oatmeal. Hot, soupy, bland…JUST KIDDING. We couldn’t get enough of it, especially as the temperatures start to drop!
Prepping breakfast is about to be different for you, forever. Bulk up your typical plain oatmeal with fun new flavors this fall, bringing new warmth to your tummy first thing every morning. (Or at night, as a snack – we don’t judge!!) So, while the amateurs are relying on Maple Brown Sugar (although a classic, I agree), you can spice up a classic by recreating this delicious recipe at home.
Now, first step is getting yourself some plain rolled oats. If you don’t have any available, you may be out of luck because oats are kind of a key ingredient in oatmeal. Other than that, the rest is optional but- trust us- you’re going to want to use everything we suggest.
Even more exciting? You’re going to be making your own walnut butter to include in this recipe. Trust us, it is totally worth it, and bonus? It will make you feel like such a pro. The best part is, it’s a lot easier than people think! The natural oils will make it nice and creamy, so just grab your walnuts and, using either a food processor or blender, pulse away until you get a sticky, buttery consistency. Not a fan of walnuts? Feel free to swap out for almonds, cashews, or peanuts. When you’re done with the nut butter, it’s time to put the meal together.
- 2 cups oatmeal
- 1.5 cups almond milk
- 1.5 cups plain yogurt
- 1 tbsp honey
- 1 tbsp dried coconut
- 1 fig, sliced
- 1 clementine, peeled and sliced
- 2 tbsp walnut butter
- Put the oatmeal, almond milk & yogurt in a pot and cook at medium heat for about 6 minutes until it thickens.
- Top with walnut butter, figs, clementines, and honey
- Finish with a sprinkle of coconut
