Afternoon tea with scones. Ah, the wonderful thing invented by the Brits! Could there be a better way to celebrate a lazy afternoon with friends than sitting together, enjoying a ‘cuppa’ (as they call it in England), contemplating life, and indulging in something sweet? If you’ve ever been to a formal afternoon tea, you’ll know it often involves scones, ‘finger’ sandwiches (bite-sized), and ‘biscuits’ with all sorts of delicious spreads and toppings.
So, instead of heading to the store for pre-made scones, we thought we’d come up with a quick and easy recipe that you can create at home. Not only will these scones taste better (because YOU made them, of course!), but they won’t have any of those nasty and unhealthy preservatives in them.
Sometimes the fewer the ingredients, the more flavorful and delicious the dish. We came up with a recipe for scones using only five ingredients, and a few simple steps. Let’s just say that you may be baking scones far more often than you host afternoon teas!
We hope you make this weekend an occasion to call up a friend, invite them over, and treat them to this truly unique and special British snack. Don’t forget the tea!
- 3 cups self-raising flour
- 1 cup of heavy whipping cream, unwhipped
- 1 cup cold lemonade
- Whipped cream
- Preheat the oven to 400 degrees
- Combine the flour, cream and lemonade in a bowl until fully mixed. Don’t over mix – just allow to be soft and sticky
- On a floured surface, roll out to about 1 inch thick, and use a round glass to cut circular scones. Brush the tops lightly with milk to make them go golden
- Line a baking sheet with parchment paper and lay the scones out. Bake for about 12 minutes
- Allow to cool for a bit. Cut the scones in half and spread with cream and jam
